Four decades of service, function halls, wedding marquees and back-yard coals have gone into this kitchen. Timing learned by feel, seasoning learned by taste, and a stubborn refusal to send out a plate that isn't worth the wait.

The chef will tell you he has exactly two passions in this life: cooking and making love — and both are done slow, generous and with the whole heart in it.
